Bird’s Nest Sangria

Servings: approx. 600ml

Ingredients:

Bird’s nest 20g

Mango 600g (about 2 small mangoes)

Blackcurrant liqueur 225ml

Orange juice 75ml

Apple 1 (sliced)

Orange 1 (peeled and sliced)


Method:

1. Soak and steam bird’s nest (Please refer to P.xxx “Preparation of Bird’s Nest for Cooking”). Let cool and set aside.

2. Rinse mangoes. Peel and pit. Process into puree with a blender. Refrigerate (0-8°C) and set aside.

3. Mix black currant liqueur and orange juice. Refrigerate (0-8°C) and set aside.

4. Take the mango puree out from refrigerator and divide into glasses equally. Add apple and orange slices. Pour in black currant liqueur and orange juice mixture. Stir in bird’s nest. Serve.


Tips:

Do not use green mangoes, use ripped mangoes for a sweeter taste.

It is recommended to use premade orange juice as it is easier to control the sweetness than the freshly squeezed juice.

Bird’s nest will become crispy when it is with alcohol.

Adding fruit slices can separate the drinks to have a better presentation; just mix well before consuming.

Add the ingredients just right before serving; as the upper drink will diffuse downwards gradually and affect the presentation.

Strawberry Milkshake with Bird’s Nest

Servings: approx. 1,000ml

Ingredients:

Bird’s nest 20g

Strawberry 400g

Milk 150ml

Strawberry ice cream 400g


Method:

1. Soak and double boil bird’s nest (Please refer to P.xxx “Preparation of Bird’s Nest for Cooking”). Let cool and set aside.

2. Rinse strawberries and remove stem. Cut half of the strawberries into dices.

3. Cut the remaining strawberries into halves. Add ice cream and milk. Process into milkshake with a blender.

4. Pour the milkshake into glasses. Add bird’s nest and diced strawberries. Serve.

Mango Juice with Bird’s Nest

Servings: approx. 900ml

Ingredients:

Bird’s nest 40g

Mango 900g (about 3 small mangoes)

Mango ice cream 300g


Method:

1. Soak and double boil bird’s nest (Please refer to P.xxx “Preparation of Bird’s Nest for Cooking”). Let cool and set aside.

2. Rinse mangoes. Peel and pit.

3. Process mango flesh and ice cream with a blender. Pour into glasses. Stir in bird’s nest. Serve.

Bird’s Nest, Chia Seed and Dried Longan Drink

Servings: approx. 650m
Ingredients:

Bird’s nest 30g

Hot water 750ml

Chia seed 20g

Dried longan 100g

Red date 60g


Method:

1. Soak and double boil bird’s nest (Please refer to P.xxx “Preparation of Bird’s Nest for Cooking”). Let cool and set aside.

2. Rinse dried longan. Pit and rinse red dates.

3. Place dried longan and red dates in a double boiler. Pour in hot water. Double boil for 45 minutes over medium heat. Take the ingredients out and set the water aside. Let cool.

4. Rinse chia seeds and add into the dried longan and red date water. Refrigerate (0-8 °C) for 4 hours. Add bird’s nest. Serve.


Tips:

Chia seeds will form into lumps if standing for too long after in touch with water or adding into hot drink. It is recommended to stir into cold drink as soon as it is rinsed.

Chia seed – seed from chia. They contain 38g of dietary fiber in 100g of organic chia seeds, which are good for the digestive system. They also contain rich Omega3 (19.6g/100g), Omega6 (6.2g/100g) and Omega9 (2.6g/100g), which can regulate the cholesterol level and reduce the risk of cardiovascular diseases.

Dried longan - heart and spleen strengthening, qi tonifying, blood replenishing, heart and nerves calming. Suitable for people who are suffering from insomnia, forgetfulness, palpitations, flustered, and good for women after giving birth or lack in qi and blood supply.

Red date - as known as “fruit for spleen”, have functions of spleen invigorating and qi tonifying.
